Baked oatmeal squares

A soft, lightly sweet bake you can slice into squares and grab through the week. Make it on a quiet evening and breakfast is sorted for days.

Ingredients

6 servings
  • 200 g porridge oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 ripe bananas (mashed)
  • 1 egg (beaten)
  • 350 ml milk
  • 1 tbsp honey (or maple syrup, optional)
  • vegetable oil (for greasing)

Method

  1. 1Heat the oven to 180C (160C fan) and lightly grease a small baking tin, around 20cm square.
  2. 2In a large bowl, mash the bananas until fairly smooth.
  3. 3Stir in the egg, milk and honey, then add the oats, baking powder and cinnamon.
  4. 4Mix well and tip into the tin, spreading it level.
  5. 5Bake for about 25 minutes until set and golden on top.
  6. 6Cool in the tin, then cut into 6 squares.

Freezing: cool fully, then freeze the squares in a tub or bag for up to 3 months. Reheat gently in the microwave until warmed through.

Swap: try a handful of berries or chopped apple stirred through before baking.
