Beef and broccoli rice skillet
A quick, savoury one-pan dinner using microwave rice to save time. Everything finishes in the same pan for the least possible washing up.

Ingredients
4 servings
- 1 tbsp vegetable oil
- 500 g beef strips
- 1 broccoli (cut into small florets)
- 2 microwave rice (250g pouches)
- 3 tbsp soy sauce
- 2 cloves garlic (crushed (or ½ tsp garlic granules))
- 100 ml water
- black pepper (to taste)

Method
- 1Heat the oil in a large frying pan or wok over a high heat. Add the beef strips and cook for 3 to 4 minutes until browned. Lift out onto a plate.
- 2Add the broccoli and water to the pan, cover, and cook for 4 to 5 minutes until just tender.
- 3Stir in the garlic and cook for a minute, then return the beef to the pan.
- 4Add the microwave rice and soy sauce and stir-fry for 3 to 4 minutes until everything is hot through.
- 5Season with black pepper and serve.
Tip: squeeze the rice pouches to loosen the grains before opening so they scatter easily into the pan.
