Black bean quesadillas

Crisp, cheesy and quick, these are a satisfying lunch or light dinner. Make a double batch of the filling and freeze half for another day.

Ingredients

  • 1 × 400g tin black beans (drained and rinsed)
  • 1 red pepper (finely chopped)
  • 100 g cheese (grated)
  • 4 tortilla wraps
  • 1 tsp ground cumin
  • 1 tbsp olive oil
  • salt and black pepper (to taste)

Method

  1. 1Warm a little of the oil in a frying pan and cook the red pepper for 3 to 4 minutes until softened.
  2. 2Add the black beans and cumin, season, and mash lightly with a fork so the mixture holds together. Tip into a bowl.
  3. 3Spread the filling over two tortillas, scatter over the cheese, and top each with a second tortilla.
  4. 4Wipe the pan, add a little oil, and cook each quesadilla for 2 minutes on each side until golden and the cheese has melted.
  5. 5Cut into wedges and serve.

Batch tip: the bean filling freezes well. Cool fully, freeze in portions for up to three months, then defrost and use as above.

Serving idea: a spoonful of soured cream or salsa on the side is a nice touch.
