Gnocchi with tomato sauce and spinach
Shelf-stable gnocchi cooks in minutes, so this is a warm, soft dinner for low-energy evenings. Everything happens in one pan.

- 500 g gnocchi (shelf-stable pack)
- 1 × 400g tin chopped tomatoes
- 100 g spinach (fresh or frozen)
- 1 tbsp olive oil
- salt, black pepper, and dried herbs (to taste (basil or oregano work well))

Method
- 1Warm the olive oil in a large frying pan over a medium heat.
- 2Add the gnocchi and cook for 2 to 3 minutes, stirring, until lightly golden.
- 3Pour in the chopped tomatoes, add the dried herbs, and season. Simmer for 5 minutes.
- 4Stir in the spinach and cook for another 2 to 3 minutes until wilted and the gnocchi is tender.
- 5Season to taste and serve.
Tip: frozen spinach works just as well - stir it in a minute earlier so it has time to thaw and warm through.
