Loaded sweet potatoes with beans
The microwave does the hard work while you rest, then it is just a case of spooning over warm spiced beans. Soft, filling and ready in about 20 minutes.

Ingredients

- 2 sweet potatoes (medium, scrubbed)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 × 400g tin black beans (drained, or kidney beans)
- 1 × 400g tin chopped tomatoes
- salt and black pepper (to taste)

Method
- 1Prick the sweet potatoes all over with a fork and microwave for 8 to 10 minutes until soft, turning halfway.
- 2Meanwhile, warm the oil in a pan and stir in the paprika for a few seconds.
- 3Add the beans and chopped tomatoes, then simmer for 5 minutes until thickened.
- 4Season the beans to taste.
- 5Split the sweet potatoes open, fluff the insides and spoon the beans over the top.
Cooking times vary between microwaves - give the potatoes an extra minute if they still feel firm.
A dollop of soured cream or grated cheese on top is a nice finish if you like.
