Loaded sweet potatoes with beans

The microwave does the hard work while you rest, then it is just a case of spooning over warm spiced beans. Soft, filling and ready in about 20 minutes.

Ingredients

2 servings
  • 2 sweet potatoes (medium, scrubbed)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 × 400g tin black beans (drained, or kidney beans)
  • 1 × 400g tin chopped tomatoes
  • salt and black pepper (to taste)

Method

  1. 1Prick the sweet potatoes all over with a fork and microwave for 8 to 10 minutes until soft, turning halfway.
  2. 2Meanwhile, warm the oil in a pan and stir in the paprika for a few seconds.
  3. 3Add the beans and chopped tomatoes, then simmer for 5 minutes until thickened.
  4. 4Season the beans to taste.
  5. 5Split the sweet potatoes open, fluff the insides and spoon the beans over the top.

Cooking times vary between microwaves - give the potatoes an extra minute if they still feel firm.

A dollop of soured cream or grated cheese on top is a nice finish if you like.
