Macaroni with peas and cheese
A familiar, comforting bowl of macaroni cheese with soft peas stirred through. Easy to eat and always reassuring on a low day.

- 300 g macaroni
- 150 g frozen peas
- 40 g butter
- 40 g plain flour
- 500 ml milk
- 150 g cheddar cheese (grated)
- salt and black pepper (to taste)

Method
- 1Cook the macaroni in a pan of boiling water for about 10 minutes, adding the peas for the last 3 minutes, then drain.
- 2Meanwhile, melt the butter in another pan, stir in the flour and cook for a minute.
- 3Gradually whisk in the milk to make a smooth sauce, stirring until it thickens.
- 4Take off the heat and stir in most of the cheese until melted, then season to taste.
- 5Fold the macaroni and peas through the sauce and serve, with the rest of the cheese on top.
For a golden top, spoon into a dish, scatter with the reserved cheese and grill for a few minutes.
A little more milk when reheating keeps leftovers soft.
