Macaroni with peas and cheese

A familiar, comforting bowl of macaroni cheese with soft peas stirred through. Easy to eat and always reassuring on a low day.

Ingredients

  • 300 g macaroni
  • 150 g frozen peas
  • 40 g butter
  • 40 g plain flour
  • 500 ml milk
  • 150 g cheddar cheese (grated)
  • salt and black pepper (to taste)

Method

  1. 1Cook the macaroni in a pan of boiling water for about 10 minutes, adding the peas for the last 3 minutes, then drain.
  2. 2Meanwhile, melt the butter in another pan, stir in the flour and cook for a minute.
  3. 3Gradually whisk in the milk to make a smooth sauce, stirring until it thickens.
  4. 4Take off the heat and stir in most of the cheese until melted, then season to taste.
  5. 5Fold the macaroni and peas through the sauce and serve, with the rest of the cheese on top.

For a golden top, spoon into a dish, scatter with the reserved cheese and grill for a few minutes.

A little more milk when reheating keeps leftovers soft.
