Microwave jacket potato with beans
A warm, filling plate with almost no effort - the microwave does the work while you rest. It uses cupboard staples and is ready in about ten minutes.

- 1 baking potato (medium)
- 1 × 400g tin baked beans
- 30 g grated cheese (optional)
- salt and black pepper (to taste)

Method
- 1Scrub the potato, prick it all over with a fork and place on a microwave-safe plate.
- 2Microwave on high for 5 minutes, then turn it over and microwave for another 3-5 minutes until soft all the way through.
- 3While the potato finishes, warm the beans in a bowl in the microwave for 1-2 minutes, or in a small pan.
- 4Cut a cross in the top of the potato and gently squeeze the sides to open it up.
- 5Spoon the beans over, season, and scatter over the grated cheese if using.
Low-energy tip: cook two potatoes at once and keep one in the fridge to reheat tomorrow.
