Microwave jacket potato with beans

A warm, filling plate with almost no effort - the microwave does the work while you rest. It uses cupboard staples and is ready in about ten minutes.

Ingredients

  • 1 baking potato (medium)
  • 1 × 400g tin baked beans
  • 30 g grated cheese (optional)
  • salt and black pepper (to taste)

Method

  1. 1Scrub the potato, prick it all over with a fork and place on a microwave-safe plate.
  2. 2Microwave on high for 5 minutes, then turn it over and microwave for another 3-5 minutes until soft all the way through.
  3. 3While the potato finishes, warm the beans in a bowl in the microwave for 1-2 minutes, or in a small pan.
  4. 4Cut a cross in the top of the potato and gently squeeze the sides to open it up.
  5. 5Spoon the beans over, season, and scatter over the grated cheese if using.

Low-energy tip: cook two potatoes at once and keep one in the fridge to reheat tomorrow.
