One-pot sausage and tomato pasta

The pasta cooks in the sauce, so there is only one pan to wash. It makes plenty and freezes well, so keep a few portions back for busy days.

Ingredients

4 servings
  • 1 tbsp olive oil
  • 6 sausages (skins removed)
  • 1 onion (chopped, or use frozen chopped onion)
  • 2 cloves garlic (crushed (or ½ tsp garlic granules))
  • 2 × 400g tin chopped tomatoes
  • 300 g pasta (any short shape)
  • 400 ml water
  • salt, black pepper, and dried herbs (to taste)

Method

  1. 1Heat the oil in a large pan over a medium heat. Squeeze the sausage meat out of the skins in small pieces and cook for 5 minutes until browned.
  2. 2Add the onion and cook for 4 to 5 minutes until softened, then stir in the garlic.
  3. 3Pour in the chopped tomatoes, water, dried herbs and pasta. Stir well.
  4. 4Bring to a simmer, then cook for 12 to 15 minutes, stirring often so the pasta does not stick, until tender.
  5. 5Season to taste and serve.

Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.

Tip: add a splash more water if the pan looks dry before the pasta is cooked.
