Pork chops with apples and green beans

Pork chops roast alongside sweet apple wedges and green beans on one tray, so the flavours mingle as they cook. A quick, tidy dinner with a comforting autumn feel any time of year.

Ingredients

4 servings
  • 4 pork chops
  • 2 apples (cored and cut into wedges)
  • 300 g green beans (trimmed)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • salt and black pepper (to taste)

Method

  1. 1Heat the oven to 200C fan and put the pork chops on a large baking tray.
  2. 2Drizzle over half the oil, scatter on the thyme and season well.
  3. 3Roast for 10 minutes, then add the apple wedges and green beans, drizzle over the rest of the oil and toss lightly.
  4. 4Roast for a further 15 to 18 minutes until the pork is cooked and the beans are tender.
  5. 5Check the pork is cooked through and piping hot in the middle, with no pink meat, before serving.

Serving idea: add some new potatoes or crusty bread to make it more filling.
