Sausage, pepper and onion traybake

Sausages, sweet peppers and red onion all roast together on one tray for a hearty dinner with barely any washing up. Tip everything on, then let the oven do the work.

Ingredients

4 servings
  • 8 sausages
  • 2 peppers (any colour, cut into chunks)
  • 2 red onions (cut into wedges)
  • 2 tbsp olive oil
  • 1 tsp dried mixed herbs
  • salt and black pepper (to taste)

Method

  1. 1Heat the oven to 200C fan and scatter the peppers and onions over a large baking tray.
  2. 2Nestle the sausages in among the vegetables, drizzle over the oil and scatter on the herbs.
  3. 3Season well and toss everything so it is lightly coated, then spread it out in a single layer.
  4. 4Roast for 30 to 35 minutes, turning once halfway through, until the sausages are browned and the vegetables are soft.
  5. 5Check the sausages are cooked through and piping hot in the middle, with no pink meat, before serving.

Serving idea: lovely with mash or crusty bread to mop up the juices.

Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.
