Sausage, pepper and onion traybake
Sausages, sweet peppers and red onion all roast together on one tray for a hearty dinner with barely any washing up. Tip everything on, then let the oven do the work.

Ingredients
4 servings
- 8 sausages
- 2 peppers (any colour, cut into chunks)
- 2 red onions (cut into wedges)
- 2 tbsp olive oil
- 1 tsp dried mixed herbs
- salt and black pepper (to taste)

Method
- 1Heat the oven to 200C fan and scatter the peppers and onions over a large baking tray.
- 2Nestle the sausages in among the vegetables, drizzle over the oil and scatter on the herbs.
- 3Season well and toss everything so it is lightly coated, then spread it out in a single layer.
- 4Roast for 30 to 35 minutes, turning once halfway through, until the sausages are browned and the vegetables are soft.
- 5Check the sausages are cooked through and piping hot in the middle, with no pink meat, before serving.
Serving idea: lovely with mash or crusty bread to mop up the juices.
Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.
