Scrambled eggs on toast
A simple, filling breakfast that comes together in five minutes. Eggs are a good source of protein, and this version is easy to adapt when energy is low.

- 2 eggs (large)
- 1 tbsp milk or plant-based alternative
- knob butter or a little oil (small)
- 2 slices bread (toasted)
- salt and black pepper

Method
- 1Crack the eggs into a small bowl, add the milk, season lightly, and beat with a fork.
- 2Melt the butter in a small non-stick pan over a low heat.
- 3Pour in the egg mixture and stir gently with a spatula, moving it slowly across the pan.
- 4Remove from the heat while the eggs are still slightly soft - they will carry on cooking briefly.
- 5Spoon onto the toast and serve straight away.
Tip: Low heat and patience are the secret - high heat makes scrambled eggs rubbery.
