Tomato and white bean soup

A cosy, cupboard-staple soup that comes together in one pan and freezes well for later. Make a batch on a good day and keep some in the freezer for harder ones.

Ingredients

2 servings
  • 1 onion (chopped)
  • 1 × 400g tin chopped tomatoes
  • 1 × 400g tin cannellini beans (drained, or butter beans)
  • 400 ml vegetable stock (from 1 stock cube)
  • 1 tbsp olive oil
  • salt and black pepper (to taste)

Method

  1. 1Warm the oil in a pan and cook the onion gently for about 5 minutes until soft.
  2. 2Add the chopped tomatoes, beans and stock, then stir to combine.
  3. 3Bring to a simmer and cook for 10 minutes, stirring now and then.
  4. 4Blend until smooth for a smoother soup, or leave it chunky - both work.
  5. 5Season to taste and serve, with bread on the side if you like.

Freezing: cool fully, then freeze in portions for up to 3 months. Defrost and reheat until piping hot.
