Turkey and vegetable chilli
A mild, comforting chilli that makes plenty. It freezes really well, so cook a big pot and stash portions away for busy or low-energy days.

Ingredients

- 1 tbsp olive oil
- 1 onion (chopped, or use frozen chopped onion)
- 2 cloves garlic (crushed)
- 500 g turkey mince
- 1 tsp ground cumin
- 1 tsp mild chilli powder
- 1 × 400g tin chopped tomatoes
- 1 × 400g tin kidney beans (drained and rinsed)
- 200 g frozen mixed vegetables
- 1 tbsp tomato puree
- 200 ml water
- salt and pepper

Method
- 1Heat the oil in a large pan over a medium heat. Add the onion and cook for 4 to 5 minutes until softened, then stir in the garlic.
- 2Add the turkey mince and cook, breaking it up with a spoon, until it is no longer pink.
- 3Stir in the cumin and chilli powder and cook for a minute so the spices become fragrant.
- 4Add the chopped tomatoes, kidney beans, frozen vegetables, tomato puree and water. Stir well.
- 5Bring to a simmer, then turn the heat down and cook for 20 minutes, stirring now and then, until thickened and the vegetables are tender.
- 6Season to taste with salt and pepper.
Serving idea: serve with rice, or a jacket potato if you prefer.
Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.
