Turkey meatballs in tomato sauce

Simple turkey mince meatballs simmered in an easy tomato sauce. Make a big batch and freeze portions, then serve with pasta, rice or mash whenever you need an easy dinner.

Ingredients

4 servings
  • 500 g turkey mince
  • 50 g breadcrumbs
  • 1 tsp dried mixed herbs
  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (crushed)
  • 2 × 400g tin chopped tomatoes
  • 1 tbsp tomato puree
  • salt and black pepper (to taste)

Method

  1. 1Mix the turkey mince, breadcrumbs, herbs and a little seasoning in a bowl, then roll into small meatballs.
  2. 2Heat the oil in a large pan over a medium heat and brown the meatballs all over, then lift them out onto a plate.
  3. 3Add the onion to the pan and cook for 4 to 5 minutes until softened, then stir in the garlic.
  4. 4Add the chopped tomatoes and tomato puree, stir well and bring to a gentle simmer.
  5. 5Return the meatballs to the pan, cover and simmer for 15 minutes, stirring now and then.
  6. 6Check the meatballs are cooked through and piping hot in the middle, then season the sauce to taste.

Serving idea: serve with pasta, rice or mash.

Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.
