Turkey taco soup

A hearty, mild bowl of comfort that all goes in one pot. It makes a big batch and freezes beautifully for the days you cannot face cooking.

Ingredients

4 servings
  • 1 tbsp olive oil
  • 1 onion (chopped, or use frozen chopped onion)
  • 500 g turkey mince
  • 2 tsp mild taco or fajita seasoning
  • 1 × 400g tin chopped tomatoes
  • 1 × 400g tin mixed beans (drained and rinsed)
  • 200 g frozen mixed vegetables
  • 500 ml chicken stock (from 1 stock cube)
  • salt and black pepper (to taste)

Method

  1. 1Heat the oil in a large pan over a medium heat. Add the onion and cook for 4 to 5 minutes until softened.
  2. 2Add the turkey mince and cook, breaking it up with a spoon, until no longer pink.
  3. 3Stir in the taco seasoning and cook for a minute until fragrant.
  4. 4Add the chopped tomatoes, beans, frozen vegetables and stock. Stir well.
  5. 5Bring to a simmer, then cook for 15 minutes until the vegetables are tender and the soup has thickened slightly.
  6. 6Season to taste and serve.

Batch tip: cool fully, then freeze in portions for up to three months. Defrost overnight in the fridge and reheat until piping hot.

Turkey mince and mixed beans both contain protein.

Serving idea: a handful of grated cheese or a spoonful of soured cream on top is lovely if you fancy it.
