Vegetable egg fried rice
A speedy one-pan favourite using a pouch of microwave rice and frozen veg. On the table in about 15 minutes with barely any chopping.

Ingredients
2 servings
- 1 tbsp vegetable oil
- 2 eggs (beaten)
- 200 g frozen mixed vegetables
- 250 g microwave rice (1 pouch)
- 1 tbsp soy sauce
- salt and black pepper (to taste)

Method
- 1Warm half the oil in a large frying pan, pour in the beaten eggs and stir until just set, then tip onto a plate.
- 2Add the rest of the oil and the frozen vegetables, cooking for 3 to 4 minutes until hot.
- 3Squeeze the rice pouch to separate the grains, then add to the pan and stir-fry for 3 minutes.
- 4Return the egg to the pan and add the soy sauce, tossing everything together.
- 5Season to taste and serve straight away.
Frozen peas or sweetcorn on their own work just as well as a mixed bag.
A pinch of garlic granules or ginger adds extra flavour if you have them.
