Vegetable egg fried rice

A speedy one-pan favourite using a pouch of microwave rice and frozen veg. On the table in about 15 minutes with barely any chopping.

Ingredients

2 servings
  • 1 tbsp vegetable oil
  • 2 eggs (beaten)
  • 200 g frozen mixed vegetables
  • 250 g microwave rice (1 pouch)
  • 1 tbsp soy sauce
  • salt and black pepper (to taste)

Method

  1. 1Warm half the oil in a large frying pan, pour in the beaten eggs and stir until just set, then tip onto a plate.
  2. 2Add the rest of the oil and the frozen vegetables, cooking for 3 to 4 minutes until hot.
  3. 3Squeeze the rice pouch to separate the grains, then add to the pan and stir-fry for 3 minutes.
  4. 4Return the egg to the pan and add the soy sauce, tossing everything together.
  5. 5Season to taste and serve straight away.

Frozen peas or sweetcorn on their own work just as well as a mixed bag.

A pinch of garlic granules or ginger adds extra flavour if you have them.
